Hello Isaac,
It is possible to do that. Tags are what WordPress calls a non-hierarchical taxonomy. You can create them using a plugin like https://wordpress.org/plugins/custom-post-type-ui/screenshots/ or https://wordpress.org/plugins/simple-taxonomy/ .
With either one what you’ll want to do is create a new taxonomy for the podcast post type. Set it to be non-hierarchical and it’ll work like tags do.
