Hello again,
Is there an easy way to customise the Mail Chimp widget to integrate a First name, Surname and postcode into the sign up form?

Excellent question Ax. Probably the easiest option there would be to use a plugin that has a customizable MailChimp form. MailChimp for WordPress (https://wordpress.org/plugins/mailchimp-for-wp/) is a popular option in a plugin. Or you can create a custom sign up form in your MailChimp account and then add it to the site via a text widget. That way you can create exactly the fields you need.
