I believe the lightbox that’s bundled with the theme will show the image’s title as a caption. You can change the title to be what you’d like to have displayed in the lightbox.
To have text displayed below the image thumbnail, I believe you’d have to do some custom coding to accomplish that. What you would need to do is create a new folder inside your elite theme folder called WooCommerce. Then copy the product-thumbnails.php file out of the Woocommerce plugin and place it in the new folder in the theme. You can then edit it there and that will override the one in the plugin.
Overriding templates in Woocommerce can be done, but it usually takes just a bit of work. There’s a post about that in the Woocommerce documentation at http://docs.woothemes.com/document/template-structure/
